Surf and turf burritos

Ingredients

  • ·         2 teaspoons kosher salt
  • ·         2 teaspoons cumin
  • ·         2 teaspoons garlic powder
  • ·         2 teaspoons onion powder
  • ·         2 teaspoons chili powder
  • ·         1 teaspoon oregano
  • ·         1 teaspoon black pepper
  • ·         ¼ teaspoon cayenne (optional)
  • ·         2 tablespoons avocado oil, or olive oil, divided
  • ·         1½ pounds sirloin steak, pounded thin
  • ·         1 pound large shrimp, peeled and deveined
  • ·         Juice of 2 limes
  • ·         4 large flour tortillas, warmed
  • ·         ½ cup refried beans, warmed
  • ·         1 cup Mexican rice
  • ·         1 cup shredded Monterey Jack cheese
  • ·         ½ cup sour cream, or Mexican crema
  • ·         ½ cup pico de gallo
  • ·       Hot sauce, for serving
    
    Instructions 

Step 1

Salt, cumin, garlic powder, onion powder, chili powder, oregano, black pepper, and cayenne pepper should all be combined in a small bowl.

Step 2

Drizzle about 1 tablespoon of avocado oil over the sirloin steaks and season with ½ of the spice mixture, using your fingers to massage the seasonings into the meat. Set the steak aside to marinate for 15 minutes.

Step 3

The remaining 1 tablespoon of avocado oil, the remaining spice mixture, and the shrimp should be combined in a big bowl and coated.

Step 4

A sizable nonstick skillet should be heated to medium.

Step 5

Pour the lime juice over the shrimp as you add them to the skillet. The shrimp should be cooked for around 5 minutes or until opaque.

Step 6

The shrimp should be placed in a basin, covered, and left alone.

Step 7

The seasoned steak should be added to the same skillet and cooked for about 4-5 minutes per side, or until the outside is browned and the interior is medium-rare. If the entire flank steak cannot fit in the skillet at once, cook it in two batches or in two separate pans.

Step 8

After moving the flank steak to a cutting board, give it five minutes to rest. The meat should be cut into bite-sized pieces.

Step 9

Put the burritos together. Refried beans are spread in the lower third of each flour tortilla using 2 tbsp. Between the tortillas, divide the cooked shrimp, cooked steak, and Mexican rice. Shredded cheese, sour cream, and pico de gallo are used to complete each filler bundle.

Step 10

Tuck in the sides of the burrito toward the center and roll the tortilla away from yourself and over the filling to seal. Optionally, place the assembled burrito seam side down in a skillet over medium-high heat until the tortilla is golden brown. Serve the burritos immediately with hot sauce.
